Oven chicken schnitzel

  • Chicken breast

  • breadcrumbs

  • freshly grated padano or parmesan cheese

  • dry garlic and parsley mixture (for sale in supermarkets and at the Friday La Herradura market stall.)

  • salt

  • olive oil (a spray is handy)

  • oven paper


Chicken parmesan 4 (1)Preheat the oven to 180 degrees whilst you prepare the chicken.

Put a sheet of oven paper on an oven tray and spray or brush with a little bit of olive oil, not too much.

Mix breadcrumbs with the grated padano cheese and some garlic and parsely mixture. (A few more breadcrumbs than padano cheese and garlic and parsley mixture to taste)

Chicken parmesan 4 (2)Cut the chicken breast into fairly thin (about 1/5 a cm thick) fillets. You can rub a little olive oil on the fillets and sprinkle with a little salt. Then put them into the breadcrumb mixture so they are coated well. Put the fillets on the baking paper and spray very lightly or dab with a brush with olive oil. Then put in the oven until golden brown, approx. 10-15 mins. (depends on how thick your chicken fillets are) Check if chicken is cooked before serving.
