Artichoke delight

artichoke 8Do you ever wonder what to do with the fresh artichokes that you see in the shops when they are in season?
This week we have a great recipe for you.

About 5 or 6 fresh artichokes
1 egg
water (or milk)
Olive oil
few tablespoons of flour

In a plate you put some flour and an egg and mix, adding a little bit of water or milk till you get a pancake batter substance. Add some salt to this mix.
Prepare the artichokes. You are only going to use the hearts. See images to guide you. First you cut the largest part of the stem (leave about 2 cm). Now you cut off the top part of the artichoke and pull of the leaves and with a sharp knife you cut the skin off the stem.

artichoke 2The artichoke hearts are cut into 4 equal parts and the hairs on the insides of these parts are removed with a sharp knife.

artichoke 4Add the artichoke hearts to the batter so that they are lightly covered.

artichoke 6Now heat some olive oil in a frying pan and fry the battered artichoke hearts on a medium heat. You can put the lid on the pan to enhance the heat but do check that they don’t burn. The hearts only have to fry for about 5 to 10 minutes. When golden brown on one side you turn them over on the other side. When this side is golden brown too, check with a fork if they are cooked inside (fork enters easily). They don’t need long at all.

Sprinkle with some more salt if needed.
Very nice as a starter or side dish. They can be eaten warm or at room temperature.
