Today we have a recipe from our Norwegian guestwriter Wenche Gulliksen.
You need: Sandwich paper or greaseproof paper
Approx. 200 gram fish filet per person
Salt and pepper
Use one sheet of the sandwich paper. Shred carrot and celery with a potato peeler. Place the fish on top of the pile with carrot and celery. Sprinkle with a good quality olive oil and season the fish with salt and pepper. Sprinkle a little soy sauce over the fish and add basil leaves and a couple of cherry tomatoes cut in half. Wrap up the as a package as shown on the picture. You can use small pins. Bake in the middle of the oven at 200 degr C no more than 10 minutes.
Serve this dish with a mixed salad of cherry tomatoes, basil leaves and red onion. You can sprinkle some dried basil to season the salad. Then use some olive oil and a soy sauce to finish off the salad.
The fish dish is really juicy and tasty
