Babi Pangang


Fancy some Chinese food. You can make this recipe at home!


  • pork meat ( you can use fresh bacon, rib of pork or pork blade chops) approximately 1 kg

  • water

  • 3 cloves of garlic chopped finely

  • 1 teaspoon of sambal or some dried chilly pepper to tasteIMG_20170701_114700_opt (1)

  • half a star-anise if you have it, but if you don’t it will still be nice.

  • 2 tablespoons of soy sauceIMG_20170701_115244_opt

  • 1 teaspoon of salt

  • about 1 tablespoon of rice vinegar (or 2 tablespoons of rice wine)

  • 1 teaspoon of ginger powder

  • two teaspoons of brown sugar

  • frying oil

for the sauce

  • 1 inch of fresch ginger finally chopped (or use powder ginger)

  • about 2 tablespoons of tomato pure

  • 1 teaspoon of sambal or use chilly powder to taste

  • 1 teaspoon of sugar or honeyIMG_20170701_132812_opt

  • a spash of vinegar

  • the cooking liquid of the meat

  • maizena


IMG_20170701_135156_opt_optWhen the meat is sufficiently cooled down you dap it with kitchen paper and fry the pieces of meat in frying oil to crisp it up.

IMG_20170701_134650_optFor the sauce. Use the cooking liquid from the meat and stir in the ingredients for the sauce. If necessary you add a little water. When the sauce is too watery you can put a tablespoon of maizena in a cup with a tablespoon of water and mix this then into the hot sauce.

Serve the meat with the sauce and rice and if you like some stir-fried vegetables.

(the meat can look quite dark when you fry it, as if it is burned, this is because the soy sauce turns it a bit dark.
